Nutella Stuffed Cookies

More lockdown baking! Chocolate chip cookies with a secret Nutella centre! A big hit with the kids… and the adults!
Ingredients:
- 125g unsalted butter, softened
- 110g soft light brown sugar
- 1 egg
- 230g self-raising flour
- 100g chocolate chips
- 6 tsp Nutella
Instructions:
- Preheat the oven to 180°C (160°C fan assisted) and line two baking trays with parchment paper.
- Beat the butter and sugar together until light and fluffy.
- Add the egg to the mixture and beat until smooth.
- Fold in the flour.
- Stir in the chocolate chips.
- Divide the dough into 12 pieces and flatten each one slightly.
- Place 1/2 tsp Nutella in the centre of each piece, bring the sides up and pinch closed.
- Place onto two baking trays (leaving about 5cm space between each cookie) and place the trays into a freezer for 20 minutes (this helps the cookies keep their shape).
- Bake for 10-12 minutes, until just firm on top.
- Leave on the trays for a couple of minutes and then transfer to a wire rack to cool.
- Enjoy! These are especially nice when still slightly warm!
