Lotus Biscoff Rocky Road

Lockdown baking continues!  Rocky Road made with white chocolate, marshmallows, Biscoff Crunchy Spread and Lotus Biscoff Biscuits.  I will warn you though….. this is extremely moreish!

Ingredients

  • 300g White Chocolate, chopped
  • 125g Biscoff Crunchy Spread
  • 50g Unsalted Butter
  • 150g Mini Marshmallows
  • 200g Lotus Biscoff Biscuits, chopped
  • 125g Biscoff Crunchy Spread, for drizzle
  • 50g Lotus Biscoff Biscuits, for decoration

Instructions

  1. Line a 20cm square tin with parchment paper.
  2. Melt the chocolate and butter in a large bowl set over a pan of simmering water (or microwave in short bursts until fully melted).
  3. Melt 125g of Biscoff Spread in the microwave, this should take about 30 seconds.
  4. Beat the melted Biscoff Spread into the white chocolate mix.
  5. Add the marshmallows and chopped biscuits and fold together.
  6. Pour the mixture into the tin and spread until even.
  7. Melt the remaining 125g of Biscoff Spread in the microwave, pour over the mixture in the tin.
  8. Top with the remaining 50g of biscuits and refrigerate until it’s set.
  9. Remove from the fridge, cut into squares and serve.
