Lotus Biscoff Rocky Road

Lockdown baking continues! Rocky Road made with white chocolate, marshmallows, Biscoff Crunchy Spread and Lotus Biscoff Biscuits. I will warn you though….. this is extremely moreish!
Ingredients
- 300g White Chocolate, chopped
- 125g Biscoff Crunchy Spread
- 50g Unsalted Butter
- 150g Mini Marshmallows
- 200g Lotus Biscoff Biscuits, chopped
- 125g Biscoff Crunchy Spread, for drizzle
- 50g Lotus Biscoff Biscuits, for decoration
Instructions
- Line a 20cm square tin with parchment paper.
- Melt the chocolate and butter in a large bowl set over a pan of simmering water (or microwave in short bursts until fully melted).
- Melt 125g of Biscoff Spread in the microwave, this should take about 30 seconds.
- Beat the melted Biscoff Spread into the white chocolate mix.
- Add the marshmallows and chopped biscuits and fold together.
- Pour the mixture into the tin and spread until even.
- Melt the remaining 125g of Biscoff Spread in the microwave, pour over the mixture in the tin.
- Top with the remaining 50g of biscuits and refrigerate until it’s set.
- Remove from the fridge, cut into squares and serve.
