Hidden Heart Cupcakes

With Valentines Day just around the corner, I have come up with two variations of my basic vanilla cupcake. Both are very simple to make and certainly provide a bit of wow factor! Simply prepare a batch of my very vanilla cupcakes (25/05/17) and tweak as follows…..

First up are my Piñata (or Pin-heart-a!) cupcakes. Simply bake a batch of cupcakes and when they are cooled, carve a hole in the cupcake, fill with heart sprinkles, replace the sponge that you have cut away, and decorate as usual! When somebody bites into the cupcake, the heart sprinkles will be revealed!

My second variation is a cupcake with a Red Velvet heart baked into it. For this I prepared a layer of ‘Betty Crocker’s Red Velvet Cake Mix’ (available in most supermarkets) and used a heart shaped cookie cutter to cut out the hearts. I then place a Red Velvet heart into each baking case of cupcake batter and baked and decorated the cakes as usual. If you want to make your own Red Velvet cake there is a recipe on the blog (29/06/17) but it is much easier (and much less messier!) to use the box mix for this!
