Chocolate Baileys Cupcakes

When the ladies from my Hairdressers requested Baileys Cupcakes I was more than happy to oblige!  This was one of my range of festive flavours when I used to run my own cupcake business.  The recipe is basically my standard chocolate cupcake with a couple of glugs of Baileys added to both the sponge and the frosting.

Ingredients (to make 12 cupcakes):

  • 85g self raising flour
  • 4 tbsp cocoa powder
  • 110g caster sugar
  • 110g Stork margarine
  • 1 tsp baking powder
  • 2 medium eggs
  • 1 tbsp Baileys

Preheat the oven to 180°C (160°C fan assisted).  Combine all of the ingredients in a freestanding mixer.  Once combined, spoon the cake batter into cake cases in a muffin tray.  Bake in the oven for 20 minutes, or until a skewer inserted into the cake comes out clean.  Remove and cool on a wire rack.

For the frosting, combine 50g unsalted butter, 100g full fat cream cheese, 4 tbsp cocoa powder, 300g icing sugar and a couple of big glugs of Baileys!  Mix in a freestanding mixer, until smooth.  Pipe onto the cupcakes and top with a Baileys truffle or festive sprinkles!
