Banana Bread

This is a recipe that I’ve been making for years. It’s easy, and you’ve more than likely got all of the ingredients to hand. It’s ideal to make if you have a sorry, past their best, pair of bananas looking at you from the fruit bowl!
Ingredients:
- 225g plain flour
- 1 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1/4 tsp salt
- 115g unsalted butter
- 170g granulated sugar
- 2 large eggs
- 2 large, over ripe bananas, mashed
- 3 tbsp milk
- 2 tsp vanilla extract
- 55g chopped walnuts or pecans (optional)
Instructions
- Preheat the oven to 180°C and lightly grease a 2 lb loaf tin. *Baking Tip – I always use Wilton Cake Release to prepare tins*
- Cream together the butter and sugar in a free standing mixer. Add the eggs one at a time, beating well after each addition.
- Add the milk, vanilla, baking powder, bicarbonate of soda, salt and flour and mix until just combined.
- Mix in the bananas.
- Stir in the nuts, if using.
- Scrape the batter into the prepared tin and spread evenly. Bake for approximately 50 minutes, or until a skewer inserted into the centre of the bread comes out clean and the bread is slightly browned.
- Leave the bread to cool in the tin for 10 minutes before removing from the tin to finish cooling on a wire rack.
- Enjoy!
This Banana Bread is seriously good! In fact the loaf I made yesterday didn’t last 24 hours, so I made a second today!

It disappears far too quickly though!
