Paella

This is a straightforward recipe for Paella that I’ve adapted from an article I saw in ‘Men’s Health’ magazine many moons ago! What I love about this recipe is that it not only puts me in the holiday mood, it also contains a lot of vegetables and lean protein and so is also a healthy option!
Ingredients:
- 2 tbsp olive oil
- 1 red onion, finely chopped
- 1 clove of garlic, crushed
- 1 red chilli, finely chopped
- 350g cubed chicken breast
- 250g sliced chorizo sausage
- 2 sliced peppers
- 225g paella rice
- 500ml chicken stock
- 50g frozen peas
- pack of mixed cooked seafood (prawns, mussels, calamari)
- pinch of saffron
- 1 tbsp freshly chopped coriander
Instructions
1. Heat the olive oil in a large pan and cook the onion, garlic and chilli for 2 minutes until soft.
2. Stir in the chicken and cook for 3-4 minutes.
3. Add the chorizo, peppers and paella rice and stir well to coat everything in oil.
4. Add the stock, a ladle at a time, stirring until one’s absorbed before adding the next.
5. Add the saffron.
6. Stir in the peas.
7. Set the seafood among the rice and cook for 5 minutes.
8. Top with the coriander.
9. Serve and enjoy!
