The past few weeks have been a very busy time in the Rees household, with very little time for blogging!

On May 19th both Will & Morgan celebrated their birthdays, this year sharing their special day with a certain Harry & Meghan!  This was followed by a hectic but fun birthday trip to Eurodisney!

With Morgan reaching 3 years of age this birthday, and a nursery start date looming, there was the dreaded potty training to master!  This was not as tricky as anticipated and he is settling well into nursery.  In theory this should give me a couple of hours to myself each day but this doesn’t seem to have materialised yet!  Whereas I envisaged myself relaxing or reading a book or blogging, I’ve actually found no end of chores to keep me busy!

May and June are a time of reflection for our family.  May 26th would have been Greg’s 43rd Birthday, this being followed closely by Father’s Day was a double whammy for the boys to deal with.  But my mantra is to always look on the positive, and make the best of a situation, and both occasions were marked with cake and a balloon release.

June also brings the annual ‘Greg Rees Tournament’, the brainchild of one of Will’s teachers.  This is a varsity style tournament where 6 local primary schools compete to win the ‘Greg Rees shield’ which was kindly donated by Greg’s friends and colleagues in Swansea Police, many of whom were in attendance.  We were blessed with fabulous weather and the pupils proudly represented their schools in football, rugby and netball.  This is such a special day for our family and it’s wonderful to see the school playing field being put to such good use.  St Thomas primary school were the overall winners, well done to them!  The day was a fitting tribute to Greg, who was a keen rugby player and well loved Police Officer,  Roll on next year!

The recent heatwave has inspired me to experiment with cold coffee recipes!  When I’ve found it too hot to enjoy my usual flat white, I’ve tried all manner of ‘coffee coolers’.  I shall be sharing my recipes and tips on the blog very soon.

My upcoming Spanish travels have inspired me to investigate Spanish cuisine.  I’ve got some fabulous recipes to share, including an easy Paella and some ideas for Tapas.

On the baking front it’s been a bit too hot to have the oven on!  So I’ve got a no bake Gin & Tonic cheesecake recipe to share too.  But since World Cup fever has swept the nation, it would be rude not to mark the occasion with ‘World Cup Cakes’!

So here’s to more sunshine, travels and good food, with a few coffees and gins thrown in!  So what am I waiting for…..
