Lemon Drizzle Loaf Cake

This recipe is by the brilliant ‘Fitwaffle’ who is definitely worth following on social media if you love ‘drool worthy content’. This recipe is for a ‘Copycat Starbucks Lemon Cake’ which is deliciously moist & tangy.

Ingredients for the Lemon Cake:

  • 225g Stork margarine
  • 225g caster sugar
  • 4 eggs
  • 225g self raising flour
  • zest of 1 lemon

Ingredients for the Lemon Syrup:

  • 50g icing sugar
  • 50ml lemon juice

Ingredients for the Lemon Icing:

  • 250g icing sugar
  • 1 tbsp lemon juice
  • 1 tbsp milk

Instructions:

  1. Preheat the oven to 160oC (Fan) & line a 2lb loaf tin with parchment.
  2. Whisk together the margarine & sugar until light & fluffy.
  3. Add the eggs, flour & lemon zest. Whisk until just combined.
  4. Spoon the mixture into a the tin & smooth over.
  5. Bake for approximately 50-55 minutes or until a skewer comes out clean.
  6. Make the lemon syrup by mixing the icing sugar & lemon juice.
  7. Pour the syrup over the cake whilst it is still warm & in the tin.
  8. Leave to cool completely before removing from the tin.
  9. Make the lemon icing by combining the icing sugar, lemon juice & milk. The consistency should be fairly thick but pourable.
  10. Spoon the icing over the cooled cake.
  11. Enjoy!
