Lemon Drizzle Loaf Cake

This recipe is by the brilliant ‘Fitwaffle’ who is definitely worth following on social media if you love ‘drool worthy content’. This recipe is for a ‘Copycat Starbucks Lemon Cake’ which is deliciously moist & tangy.
Ingredients for the Lemon Cake:
- 225g Stork margarine
- 225g caster sugar
- 4 eggs
- 225g self raising flour
- zest of 1 lemon
Ingredients for the Lemon Syrup:
- 50g icing sugar
- 50ml lemon juice
Ingredients for the Lemon Icing:
- 250g icing sugar
- 1 tbsp lemon juice
- 1 tbsp milk
Instructions:
- Preheat the oven to 160oC (Fan) & line a 2lb loaf tin with parchment.
- Whisk together the margarine & sugar until light & fluffy.
- Add the eggs, flour & lemon zest. Whisk until just combined.
- Spoon the mixture into a the tin & smooth over.
- Bake for approximately 50-55 minutes or until a skewer comes out clean.
- Make the lemon syrup by mixing the icing sugar & lemon juice.
- Pour the syrup over the cake whilst it is still warm & in the tin.
- Leave to cool completely before removing from the tin.
- Make the lemon icing by combining the icing sugar, lemon juice & milk. The consistency should be fairly thick but pourable.
- Spoon the icing over the cooled cake.
- Enjoy!
