Morgan’s Christmas Eve Cookies

This recipe is inspired by my youngest son Morgan, who insisted on making cookies for Santa’s Christmas Eve visit!

The recipe is adapted from ‘Jane’s Patisserie’ recipe for ‘Funfetti Cookies’.

Ingredients to make 12-14 cookies:

  • 115g unsalted butter
  • 100g light brown soft sugar
  • 100g granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 300g plain flour
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1 tbsp cornflour
  • 250g white chocolate chips
  • 75g Funfetti sprinkes

Instructions:

  1. Preheat the oven to 180C/160C Fan. Line 2 large baking trays with parchment paper.
  2. Melt the butter carefully & add to a bowl with the 2 sugars. Whisk together for a couple of minutes.
  3. Add in the vanilla & egg. Whisk until combined.
  4. Add the flour, bicarb, salt & cornflour. Beat together until a cookie dough is formed.
  5. Add the chocolate chips & sprinkles & mix until fully distributed.
  6. Divide the dough into portions of approximately 75g. Roll into balls & place onto the baking trays.

7. Bake for approximately 12 minutes.

8. Leave the cookies on the trays to cool for 5 minutes before transferring to a wire rack to cool completely.

9. Enjoy! Don’t forget to leave 1 for Santa, with a glass of milk… or something stronger 😉
