Christmas Tree Brownies

These brownies are not actually Christmas tree flavoured! They are cut into triangles and decorated to look like Christmas trees! The recipe is for lovely, fudgy brownies with both milk & white chocolate chips. It is adapted from the ‘Jane’s Patisserie’ website & is a fab recipe to make with the kids over the festive period.

Ingredients:

  • 195g unsalted butter
  • 195g dark chocolate
  • 3 eggs
  • 275g caster sugar
  • 90g plain flour
  • 35g cocoa powder
  • 100g milk chocolate chips
  • 100g white chocolate chips

Instructions:

  1. Preheat the oven to 180C/160C Fan & line a baking tray with parchment paper. I used a round tin as it allowed me to easily cut the brownies into triangles, just like slicing a pizza! You can of course use a square or rectangular tin.
  2. Melt together the butter & dark chocolate in a heavy bottomed pan. Leave to cool to room temperature.
  3. Using an electric whisk, combine the eggs & sugar for a few minutes, until pale & mousse-like & double the original volume.
  4. Pour the cooled chocolate mixture over the egg mixture & fold together carefully, taking care not to knock out the air created in the previous step.
  5. Next sift in the cocoa powder & flour, fold together, again being careful to not knock out the air.
  6. Once combined, fold through the chocolate chips & pour into the prepared tin.
  7. Bake in the oven for 25-35 minutes. Remove the brownies from the oven when there is a slight wobble when you jiggle the tin. Leave to cool completely in the tin.
  8. Cut the brownies into triangle shapes & decorate to look like trees! I used green writing icing with edible stars & festive sprinkles. You could melt some white chocolate & add green food gel or use ‘Candy Melts’. Candy canes can be used for tree trunks!
