Chocolate Orange Loaf Cake

I do love a loaf cake. They are a great way to bake a cake without worrying about fancy decoration! This recipe uses 2 whole Terry’s chocolate oranges & is adapted from the wonderful ‘Jane’s Patisserie’ website. I baked this cake recently for my Mum’s birthday but it would be a great festive alternative for anyone who doesn’t like Christmas cake or pudding.

Ingredients for cake:

  • 250g Stork
  • 250g light brown soft sugar
  • 200g self-raising flour
  • 50g cocoa powder
  • 5 medium eggs
  • 2 tsp orange extract (or zest of 2 oranges)
  • 1 Terry’s chocolate orange, chopped

Ingredients for topping:

  • 125g unsalted butter
  • 250g icing sugar
  • 1 Terry’s chocolate orange

Instructions:

  1. Preheat the oven to 180C/160C Fan & line a 2lb loaf tin with parchment paper.
  2. Beat the butter & sugar together in a freestanding mixer, until light & fluffy.
  3. Add the flour, cocoa powder, eggs & orange extract & beat until smooth.
  4. Fold through the chopped Terry’s chocolate orange.
  5. Pour the mixture into the tin & bake in the oven for approximately 55 minutes, or until a skewer inserted into the cake comes out clean.
  6. Leave the cake to cool slightly in the tin & then turn out onto a wire rack to cool fully.
  7. Melt the second Terry’s chocolate orange until smooth & leave to cool.
  8. Beat the butter in a freestanding mixer for a few minutes to soften it.
  9. Add the icing sugar & beat until smooth.
  10. Add the melted chocolate orange & beat again.
  11. Using a piping bag, swirl the topping onto the cooled cake & top with more chocolate orange segments & sprinkles.
