Chocolate Orange Brownies

Another recipe perfect for an Autumn day, or dare I say the C word… Christmas!
This recipe is adapted from ‘Jane’s Patisserie’ recipe, and I must say these brownies are delicious.
Ingredients
- 150g Dark Chocolate
- 1 Terry’s Chocolate Orange (157g)
- 200g Unsalted Butter
- 3 large eggs
- 275g Caster Sugar
- 90g Plain Flour
- 35g Cocoa Powder
- 1 tsp Orange Extract (or the zest of an orange)
- 1 Terry’s Chocolate Orange (chopped)
Instructions
- Preheat your oven to 180C/160C Fan, and line a brownie tin with baking parchment.
- In a saucepan, over a medium heat, melt the dark chocolate, 1 Terry’s Chocolate Orange and butter. Leave to cool to room temperature.
- Using an electric mixer, whisk together the eggs and sugar, until pale and double the volume. This will take a few minutes.
- Pour the cooled chocolate mix over the egg/sugar mixture, and fold together carefully. Try not to knock out the air made when whisking.
- Sift in the flour and cocoa powder and add the orange extract. Combine fully.
- Fold through the chopped up Terry’s Chocolate Orange and pour into the prepared tin.
- Bake for 30-35 minutes, until a skewer inserted into the brownies comes out fairly clean (you want them to be gooey!)
- Leave to cool in the tin before cutting into squares and enjoying (lovely warmed with some ice cream!)
