Pumpkin Spice Latte Cupcakes

Autumn is well and truly upon us, so it’s time to enjoy some autumnal flavours! Here is a recipe for my favourite seasonal drink… in cupcake form!
The cake recipe is adapted from www.janespatisserie.com and the frosting recipe is my own. Both use ‘Pumpkin Pie Spice Mix’ which is available on Amazon, or you can make your own by blending ground cinnamon, ginger, nutmeg & cloves.
Ingredients to make 12 cupcakes:
- 150g Stork (or unsalted butter)
- 150g light brown sugar
- 3 medium eggs
- 150g self raising flour
- 1.5 tsp Pumpkin Pie Spice Mix
- 1 tsp vanilla extract
- 1 tbsp espresso coffee (you can use instant coffee dissolved in 1 tbsp boiling water or leave the coffee out altogether)
Ingredients for the frosting:
- 50g unsalted butter
- 100g full fat cream cheese
- 300g icing sugar, sifted
- 0.5 tsp vanilla extract
- 0.5 tsp Pumpkin Pie Spice Mix
Instructions:
- Preheat oven to 180C/160C Fan & line a 12 hole muffin tin with cake cases.
- Cream together the butter & sugar with an electric mixer until smooth.
- Add in the beaten eggs, flour, Pumpkin Pie Spice Mix, vanilla & coffee. Mix on medium speed for 20-30 seconds.
- Spoon your mixture into the cake cases until they are approximately two thirds full. Bake in the oven for 18-20 minutes or until a skewer inserted into the cake comes out clean.
- Leave to cool on a wire rack.
- To make the frosting, beat together the butter, cream cheese, icing sugar, vanilla & Pumpkin Pie Spice Mix with an electric mixer until smooth.
- Pipe or spread onto the cooled cupcakes & decorate with halloween sprinkles, marshmallows or sweets!
