Easy Rocky Road

My eldest Son loves this recipe, in fact he reckons it’s the best thing that I make! It’s quick to do, and uses ingredients that you’d probably have in your store cupboard. It’s great for an afternoon treat, or even a bake sale. There’s no baking involved, just some melting!
Ingredients
- 200g Digestive biscuits (Rich Tea or even Ginger Nuts could be used)
- 135g unsalted butter (or margarine)
- 200g chocolate (I use supermarket own make milk chocolate)
- 2.5 tbsp golden syrup
- 100g Cruchie bars, chopped (you could add popcorn, nuts or dried fruit instead)
- 100g mini marshmallows (or chopped large marshmallows)
Instructions
- Grease and line a 20cm square tin with baking paper.
- In a large saucepan, over a gentle heat, melt the butter, chocolate and syrup. Stir constantly until there are no lumps left. Then remove from the heat to cool.
- Break up the biscuits into pieces (these can vary in size) and cut the Cruchie bars into slices.
- Add the biscuits, Crunchie pieces and most of the marshmallows to the cooled chocolate mixture and stir until everything is completely covered.
- Tip the mixture into the lined tin, making sure to spread it out to the corners. Sprinkle the remaining marshmallows on top.
- Chill in the fridge for at least 2 hours, then cut into 12 pieces.
