Gin & Tonic Pancakes

It was inevitable! A gin addict like myself is always looking of ways to utilise gin! So what better way today, than in pancakes!
This recipe is adapted from ‘thegintomytonic.com’. It adds a gin twist to traditional pancakes and the recipe is super easy to follow.
Ingredients for the pancake batter:
- 200g self raising flour
- 200ml tonic water
- 50ml Gin (I used Malfy Con Limone)
- 50ml milk
- 1 egg
Ingredients for the sugar syrup:
- 4 tbsp sugar
- 4 tbsp Gin
- Juice of 2 lemons
Method
- Firstly make the sugar syrup, by combining the sugar, gin and lemon juice in a small pan. Boil on a high heat for a few minutes, until the syrup has a thick consistency. Set aside to cool.
- Make the pancake batter by whisking together the flour, tonic water, gin, milk and egg.
- Heat a knob of butter in a non stick pan. Add a couple of tablespoons of the batter and cook for 1-2 minutes on each side, until they are a golden colour.
- Stack the pancakes onto a plate and drizzle the gin syrup over the top.
- Garnish with lemon (and if you have a real sweet tooth like me, sprinkle with some sugar!)
As an alternative, I can highly recommend M&S ‘Lemon, Gin & Tonic Sauce’, it is delicious!
