Blueberry & Lemon Loaf Cake

Some of my neighbours run a fruit and vegetable business and will often drop off some lovely produce on a weekend. Last week they brought me some beautiful blueberries (they know I’m partial to putting them in my Gin!) and I decided to make a cake with them. The following recipe is adapted from ‘all recipes.co.uk’ .
Ingredients (to make a loaf cake to serve 12)
- 75g unsalted butter, softened
- 200g caster sugar
- 3 tbsp lemon juice
- 2 eggs
- 190g plain flour
- 1 tsp baking powder
- 1 tsp salt
- 125ml milk
- 2 tbsp lemon zest
- 145g blueberries
Instructions:
- Preheat the oven to 180*C & lightly grease a 2 lb loaf tin.
- Beat together the butter, sugar, lemon juice and eggs. Combine the flour, baking powder and salt in a bowl; stir into the egg mixture alternately with the milk. Fold in the lemon zest and blueberries (toss the blueberries in a little flour to prevent them from sinking). Pour the cake mixture into the prepared tin.
- Bake in the preheated oven for 50-60 minutes, until a skewer inserted into the centre comes out clean.
- Leave to cool on a wire rack.
I would recommend adding a ‘lemon drizzle’ to this cake! Simply combine 2 tbsp lemon juice with 50g caster sugar and drizzle over the cake as it’s cooling on a wire rack!
