It’s beginning to look a lot like Christmas……. Chutney

I know! I’ve mentioned the C word and it’s only September! But this a recipe that needs to be prepared in advance! I am determined to use my glut of garden apples this year, so brace yourselves for a few apple recipes…..
This is a recipe for a spiced apple chutney that has a sweet tangy flavour, and will be perfect with the Christmas meats, cheeseboard or even the Turkey curry!
The recipe makes approximately 6 jars of Chutney, has a preparation time of less than 30 minutes and a cooking time of 1.5 – 2 hours.
Ingredients:
- 225g onions, chopped
- 900g apples, cored and chopped
- 110g chopped dates
- 15g ground coriander
- 15g paprika
- 15g mixed spice
- 15g salt
- 340g granulated sugar
- 425ml malt vinegar
Method
1. Put all of the ingredients into a preserving pan. Slowly bring to the boil until the sugar has dissolved.
2. Simmer for 1.5 – 2 hours, stirring from time to time to stop the chutney sticking to the pan.
3. When it is very thick and you can draw a spatula across the base of the pan so that it leaves a channel behind it that does not immediately fill with liquid, the chutney is ready.
4. Fill sterilised jars with the Chutney, seal and cool.
5. Store in a cool, dark cupboard for two to three months before eating.
