Unicorn Cupcakes

I’ve had a few requests recently for my Unicorn Cupcakes!  These always draw gasps of admiration!  The good news is….. they are fairly easy to make.  Simply recreate the recipe for my ‘Very Vanilla Cupcakes’ (posted on 25/05/17) and follow these simple decorating tips!

To decorate 12 cupcakes I would advise doubling the amount of vanilla frosting you make.  This will ensure that you have plenty to colour and mix without scrimping!  Therefore you should mix together 100g unsalted butter, 200g full fat cream cheese, 600g sifted Icing sugar and 2tsp vanilla extract.  Once you have made the frosting, separate out into 3 bowls ready to colour.  Add a couple of drops of food colouring gel to each bowl and mix thoroughly.  Remember to start with a small amount of colouring and add more if needed.

I use the ‘AmeriColor Electric Kit’ as these are lovely vibrant colours.  I usually use the pink, yellow and blue.

Next spoon each of the coloured frostings into separate disposable piping bags.  Prepare a fourth piping bag with the nozzle you are going to use.  I use the Wilton 1M ‘Mr Whippy’ effect nozzle.  Snip the ends off the 3 bags containing the coloured icing and pipe large lines of icing into the 4th piping bag (this is the least messy way I’ve found of doing this!)

Pipe the multicoloured frosting onto the cupcakes as usual.  It will give a beautiful rainbow icing effect!  I use ‘Cake Star’ Unicorn and rainbow sugar decorations (£2.39 for a pack of 12 in Lakeland).

I’ve also discovered ‘Iced Jems’ Unicorn sprinkles (£2.50 for a sprinkle mix pot, online at www.icedjemsshop.com).  ‘Iced Jems’ also sell a ‘mini unicorn horn mould’ that you can use with sugar paste to make unicorn horns!

For extra wow factor, sprinkle with ‘Rainbow Dust’ non-toxic glitter!  I love ‘Hologram White’.
