Easter Cupcakes
For me, Easter Cupcakes are all about chocolate! I love Easter time and Easter eggs (and cupcakes)! This recipe combines my basic chocolate cupcake recipe with various treats available at this time of year! As my chocolate cupcake recipe uses cocoa powder rather than melted chocolate, the cupcakes are not to sickly. Perfect for the addition of even more chocolate!
Prepare the chocolate cupcake mix (as described in my blog post of 19/10/17). Spoon a small amount of cake mix into the bottom of each cake case and place a mini Creme or Caramel egg into the mix (remember to remove the foil wrapper!) Using a spoon, surround the egg with cake mix so that it is completely covered. Bake as usual. Prepare the chocolate frosting (as described in my blog post of 19/10/2017). Pipe the frosting onto the cooled cupcakes and top with another egg or Easter sprinkles. It’s as easy as that!
