Valentine Prosecco Cupcakes

What better way to celebrate Valentine’s Day, then with a Prosecco Cupcake?
This recipe is a variation of my ‘Very Vanilla Cupcakes’ (posted on May 25th 2017). The only difference being the addition of a Prosecco syrup to the sponge and frosting.
To prepare the Prosecco syrup, gently heat 200ml Prosecco and 75g Caster sugar in a small pan. Heat gently at first to dissolve the sugar and then increase the heat and bubble for about 5 minutes, until the mixture is just starting to turn syrupy. Leave to cool slightly.
To transform the standard Vanilla Cupcakes into Prosecco Cupcakes, simply use a pastry brush to apply the warm Prosecco syrup to the top of the baked Cupcakes. Leave the syrup soak in and repeat.
To make Prosecco frosting, mix together 50g unsalted butter, 100g full fat cream cheese, 300g icing sugar and a few teaspoons of the Prosecco syrup.
Decorate the Cupcakes with Valentine sprinkles, or even a strawberry or Love Heart!
