Gin & Tonic Drizzle Cake

This is a recipe that my Mother spotted and has been nagging me to make! A cake based on a G&T! Lime sponge with a Gin & Tonic Drizzle and Gin icing!
The recipe is taken from Jane’s Patisserie (www.janespatisserie.com), a fabulous site full of mouth watering recipes.
Ingredients:
Cake
- 250g soft margarine such as Stork (or unsalted butter)
- 250g caster sugar
- 250g self raising flour
- 5 medium eggs
- zest of 1 lime
Drizzle
- 75g caster sugar
- 5 tbsp Gin (I used Bombay Sapphire)
- 5 tbsp tonic water (I used Fever-tree)
Icing
- 200g icing sugar
- 4-5 tbsp Gin
Instructions
Cake
- Preheat your oven to 180*C and grease and line a 2lb loaf tin.
- Cream together the margarine and sugar until light and fluffy.
- Add the eggs, flour and lime zest and beat until combined.
- Pour the mixture into the tin and bake for 40-45 minutes, until a cake skewer comes out cleanly.
- Remove the cake from the oven and leave to cool slightly (you now need to make the drizzle)
Drizzle
- Heat the sugar, gin and tonic in a small pan over a low-medium heat until the sugar dissolves.
- Gently make holes in the cake with a skewer or fork and then pour the drizzle over the cake.
- Leave the cake to cool completely in the tin.
Icing
- Remove the cooled cake from the tin.
- Gradually add the Gin to the icing sugar, mixing until you get a thick pourable consistency (if it’s too runny it will slide off the cake).
- Pour & spread the icing over the cake.
- Decorate with some lime zest and slices of lime.
