Flamingos

There is one Summer trend that has definitely caught my attention – Flamingos!  What started with me buying some Flamingo drinks glasses in Ikea, has now become almost an obsession!  Everywhere I look there seems to be Flamingo stuff!  Such is this obsession that I have friends who are regularly sending me photos of Flamingo items that they find when they are out and about!  There’s just something so charming about Flamingos!  And they never fail to make me feel Summery, even in this typical British Summertime weather!

Of course, when you have an obsession there’s only one thing to do….. turn the obsession into cake!

To create these Flamingo cupcakes I used my ‘Very Vanilla Cupcake’ recipe (you can find this on the blog) and I coloured the frosting using AmeriColor Electric Pink soft gel paste (a good alternative is Wilton Rose icing colour concentrated paste).  I always use the gel pastes to colour frosting and/or cakes as they give a more vibrant colour without altering the consistency of the mix.  You only have to use a small amount to achieve even a very bright colour effect, compared to liquid food colourings.  One useful tip when colouring frosting is to use a cocktail stick to add a small amount of the gel, then mix the frosting thoroughly to check if you’ve achieved the desired shade.  You can easily repeat this to achieve a more vibrant colour but it is impossible to reverse the effect if you add too much!

The Flamingo cupcake toppers are by a company called ‘Ginger Ray’ who produce a whole range of Flamingo party supplies.  These are available online at Debenhams or Amazon.
