Scarlets lift the Pro 12 Cup(cake)!

Huge congratulations to Scarlets rugby who won the Pro 12 final with a mesmerizing display against Munster at the Aviva Stadium in Dublin on Saturday. It was thoroughly deserved for the team, who in recent weeks, have produced some scintillating performances and taken some major scalps. Well done!
My love affair with the Scarlets began a few years back when I ran my home baking business ‘Cupcakes by Rachel’. On match days I would be found in the Supporters Village selling cupcakes to passionate rugby (& cake) fans. Every fixture would provide the challenge of matching cupcakes to themes! When the Irish were in town, there would be Guinness cupcakes. When the French visited there would be Champagne cupcakes. For the Italians there would be Limoncello or Cappuccino, and so on. To represent the Scarlets heritage there would often be ‘Turk’ish Delight or Red Velvet.
This really was my dream cupcake gig, combining my loves of baking and rugby and getting to meet so many die hard supporters. I had quite a following, and would be thrilled to see customers returning time after time. I also had the odd visit off the rugby players, but of course I would never name and shame those who indulged in the odd cake! (I think we all know that the most frequent visitors were from the front row union)!
One of my favourite rugby cupcake creations was the Lion cupcake. A chocolate cupcake containing Rowntrees Lion Bar, topped with more Lion Bar. This was a cakey tribute to the 2013 series winning Lion & Scarlet, Jon Fox Davies. Let’s hope that in a few weeks time, I can celebrate another series win with these cupcakes!
